Fabrika by Madera

Fabrika by Madera is a Serbian restaurant in south-west Sydney. This is one of the only restaurants in the area that serves a mean and delicious tomahawk steak. During the easing of lockdowns in July, we wanted to celebrate new beginnings and were able to book a last-minute reservation at this restaurant.

This entree was kukuruz, a buttered and chargrilled corn-on-the-cob, topped with grated parmesan cheese. There was a contrast in the saltiness of the butter and the sweet juicy flesh of the corn pieces. It was very delicious and highly addicting to gnaw on.
I didn’t take a picture of the menu and every image I’ve found on Google was super blurry so all I can tell you is that this was a shared plate of grilled seafood πŸ˜…. Every piece was dripping in fresh ocean juices. The lemon brought froth the flamed flavours and it was such a nice dish to go with our feast of meat.

We didn’t let anything go to waste 🀣 This tomahawk steak was massive! The meat was very tender and savoury, with a strong beefy flavour. There was a moderate amount of fat on the piece. The sweet potato fries were a great addition, elevating the savouriness with its soft sweetness.

The only downside was the price of this piece as it was about $80/kg, yikes! All the weight was in the bones πŸ˜”
This was a shared dish of cheese and pita bread. The focaccia bread was airy and savoury, enhanced by the rosemary herbs. The olives were good and juicy. The salami pieces were thinly cut and stringy. Honestly, I barely touched this because it was too salty for my palate but the other three smashed it.
This was the Papardelle Con Ragu, of slow-cooked veil ragu, fresh rocket and shaved aged Grana Padano for $22.90. The portion was just enough to hit the price point. It had a very mild flavour and was not overloaded with tomato sauce. The pasta tasted light and savoury, perfect for those on a low-carb diet.

We had a great time here. Service was great. We smashed all the food. And we left satisfied with our dishes.
