Vinh Long, Vietnam 2019

Vinh Long is a city and province in Vietnam, recognisable by the famous Mekong River and Mỹ Thuận Bridge. This is the city my dad was born and raised in, and where my grandma currently lives. Here are some of the meals I ate during my visit.
This is bánh tằm bì, a southern Vietnamese dish of tapioca noodles, pork, herbs, coconut milk and fish sauce. It is a very strong umami and creamy dish, with the freshness of the herbs enhancing the thick, soft texture of the noodles.
This is the iconic Vietnamese pancake, the bánh xèo. It is usually a savoury pancake, made of rice flour and water, stuffed with pork, shrimp, bean sprouts, green onion and mung bean. The crispiness of this batter was really good. The store was very generous with their fresh herbs and the filling was well salted. This entire meal cost $5. Bargain!
Gỏi cuốn is another iconic dish. It is fresh spring roll, composed of pork, prawn, cucumber, vermicelli noodles, wrapped in rice paper. This is usually served with peanut sauce and makes for a great appetizer. I really enjoyed these rolls. It felt like they over stuffed the roll. The pork was steamed and the prawns tasted fresh AF.
